Laaaaate which is sad considering how easily the answer to this jumped to mind. (And I see nothing wrong with this, I am pleased you like him. :D)
So: At heart and if he's sorted as an adult, Dave is such a Hufflepuff. Loyalty? Hard work? Sense of fair play? It's not just that he embodies the qualities; it's that he honestly values them. Loyalty, always, and hard work, especially after putting in the grease to get the shop going.
Sorted at 11, though, I can see a couple of different scenarios: 1. Look at this little boy whose two most important things in life are his mother and his best friend, beyond anything else in the world. Hufflepuff!
2. This ties into my headcanon for Remus Lupin, which is that the hat basically looked at him, said okay, you're super-smart, you love and value learning enough to fight to get to come here, but look at what you go through every month -- the nerve it takes to still be standing the other 27 days of the moon cycle at that young an age, and the bravery you require of yourself to try and hide it from everyone, even the people you don't have to, you're most definitely a Gryffindor. So: Look at this little boy who's always hurting and always sick and still fighting tooth and nail to stay on his feet and not let his problems define him. Gryffindor!
